Ingredients
• ½ cup coconut cream
• 225g can of crushed pineapple
• 1/3 cup of light or dark rum (whichever you prefer)
• 1 Tbsp lemon or lime juice
• 4 cups of ice cubes
• Sliced pineapple to garnish
Method

Pour a half a cup of cream of coconut into a blender.

Add a 225g can of crushed pineapple packed in juice. Don't bother straining it. Just pour it all in.

Next, add a third cup of light or dark rum. The dark rum will give you a darker, richer flavour.

Add one tablespoon of lemon or lime juice.

Cover the blender and blend the mixture until it's smooth.

Add four cups of ice cubes and continue to blend the piña colada until it's completely smooth. It should be nice and thick.

Pour it into tall glasses and garnish with fresh pineapple.
