Most canned passionfruit pulp comes in syrup, so scoop out fresh fruit, otherwise your martinis will be too sweet. You can freeze the pulp in ice cube trays to prep it in advance.
• 80ml vodka, chilled
• 8 Tbsp passionfruit pulp, chilled
• 160ml cloudy apple juice, chilled
• 80ml lemon juice, chilled
• 2 passionfruit, halved, chilled, to serve
Put vodka, pulp, apple juice and lemon juice into a cocktail shaker or jar and shake until combined. Pour into 4 martini glasses and serve each topped with a passionfruit half floating in it.
