Ingredients
2 cups self-raising flour
1 tsp ground cinnamon
½ cup brown sugar
4 very ripe bananas, mashed
125g butter, melted, cooled
2 eggs, lightly beaten
¼ cup milk
1 tsp vanilla extract
¼ cup Nutella
Method

Preheat oven to moderate, 180°C. Lightly grease and line a 10 x 20cm loaf pan.

Sift flour and cinnamon together into a large bowl. Stir in sugar. Make a well in centre.

In a bowl, combine banana, butter, eggs, milk and vanilla. Pour into flour mixture. Fold together lightly to combine.

Pour half mixture into pan. Dollop over half Nutella and use a skewer to swirl through batter. Repeat with remaining mixture and Nutella.

Bake 55-60 minutes, covering with foil if over-browning, until cooked when tested with a skewer. Cool in pan 5 minutes before turning onto a wire rack to cool completely. Serve sliced, with butter, if liked.
Cook's tip
This loaf freezes well. Wrap in individual slices and freeze up to 3 months. It's also delicious toasted.
