2 large ripe avocadoes
2 tsp lemon juice
Sea salt flakes and freshly ground black pepper, to season
300ml tub full fat sour cream (see note)
35g sachet taco seasoning
1 cup grated cheddar cheese
2 long green onions, finely chopped
1 tomato, seeds removed, finely chopped
Corn chips, to serve
Mash the avocado and lemon juice in a bowl until combined. Season with salt and pepper. Spread onto a serving plate or bowl.
Combine sour cream and taco seasoning in a bowl and stir until combined. Dollop over avocado mixture.
Sprinkle with grated cheddar cheese, then top with green onions and tomato. Serve with corn chips.
