½ cup caster sugar
Juice of 3 lemons, plus extra 1, thinly sliced into rounds
12 passionfruit, cut into quarters
3 cups crushed ice
Mint sprigs, to garnish
1 lime, thinly sliced into rounds
1.25L soda water
Put sugar and 125ml water in a small saucepan and bring to the boil over a medium heat. Cook for a further 2 minutes, then remove from heat, transfer to a jug and stir in lemon juice. Refrigerate for 4 hours or overnight until cold.
Put 2 passionfruit quarters in 6 tall glasses. Top each with a little ice and a mint sprig.
Put remaining passionfruit into a large serving jug. Top with remaining ice and mint. Add cooled lemon syrup, extra lemon slices and lime slices, then top with soda. Stir well and serve.
