How to spatchcock a chicken

Are you always serving up a whole chicken? Impress friends and family with a beautifully spatchcocked one instead.

Butterflying (or spatchcocking) is a technique that flattens whole birds, allowing you to cook them quickly on the barbecue.

Gather your supplies

  • Pair of kitchen scissors
  • Chopping board

Here's how

Sit a whole chicken, breast-side down, on a clean work surface. Using kitchen scissors, cut down one side of backbone.

Cut along other side of backbone, lifting it slightly to ease cutting process. Lift out backbone and discard.

Step 3

Step 3

Turn chicken over and press down firmly on breastbone to crack. Press down again and flatten as much as possible.
