For sunny side up
STEP 1 Heat 1 Tbsp extra virgin olive oil in a non-stick frying pan over a medium heat.
STEP 2 When oil is hot, break 2 free-range eggs into 2 small bowls. Gently slip eggs into pan, holding each bowl as close to the pan as possible to avoid breaking yolk. Cook for 3 minutes or until whites have set but yolk is still runny. Cook for an extra minute or 2 if you prefer your yolks firm.
For crispy eggs
Follow Steps 1–2 above, but over a high heat. Cook until egg whites are set and edges are golden brown and crispy.
For over easy
Follow Steps 1–2. When whites are set, flip eggs and cook for a further 1 minute or until yolks are cooked to your liking.
