• 4 peeled bananas, frozen
• 1⁄2 cup leftover Christmas cake or pudding, chopped
• Mini ice-cream cones, to serve
• Caramel sauce, to serve
• Leftover roasted mixed nuts, chopped, to serve
Remove bananas from freezer and set aside for 5 minutes.
Chop bananas and put in the bowl of a food processor. Process until almost smooth. Add cake or pudding
and process until smooth. Transfer to a freezer-proof bowl and freeze for 30 minutes or until firm enough to scoop.
Scoop banana ice-cream into cones, drizzle with caramel sauce, scatter with nuts, then serve immediately.
