Ingredients
Olive oil, for frying
250g haloumi, cut into 6 slices
4 slices sourdough, lightly toasted
2 tsp harissa paste
2 Tbsp honey
2 tomatoes, sliced
Freshly ground black pepper, to season
40g butter
Method

Heat a frying pan over medium heat with a drizzle of oil. Fry haloumi for 1-2 minutes on each side until golden. Remove. Wipe pan clean.

Divide haloumi between 2 slices of toast. Spread an even amount of harissa over haloumi, drizzle with honey and arrange tomato on top. Season well with black pepper. Put remaining toast on top of each sandwich and press down.

Heat half the butter in the same frying pan over medium heat. Add sandwiches and weigh down with a second frying pan or plate. Cook for 1-2 minutes until golden. Flip, add remaining butter and cook for a further 1-2 minutes until golden and toasted. Serve.
