Blend banana, coconut water, kale, pineapple, mango and mint for a super juice.
1 banana, peeled, chopped
1 cup coconut water
2 cups torn cavolo nero kale leaves
1 cup diced pineapple
1 cup diced mango
1⁄2 cup mint leaves
Mint sprigs, to garnish
Put banana in a small zip-lock bag and freeze for 6 hours or overnight.
Remove banana from freezer and set aside for 5 minutes. Put in a blender with coconut water, kale, fruit and mint, then process until smooth. Pour into glasses and garnish with mint. Serve immediately.
