Mincemeat is a staple of the Australian household meal-time, but that doesn’t mean we’re cooking it to its fullest potential. So, Ed’s going to share a very quick and easy tip that will leave your mince more succulent, caramelised and full of flavour!

Do you find that when you’re browning your mince, it goes a little bit grey and all the water comes out? Well, Fast Ed shares his hack on how to get properly browned mince, not lose any water, have better flavour and better texture.

How to get properly browned mince

  1. Firstly you need a little bit of bi-carb soda.
  2. For a 500g pack of mince, you want about half a teaspoon.
  3. Add the mince and bi-carb soda in a bowl and mix it really well with a wooden spoon.
  4. Fry as per usual in your best frying pan.

Why does it work?

It’s all a little bit of kitchen science. The bi-carb soda makes the mixture more alkaline which means it’s going to lock in moisture, caramelise better, and you get a bit of dinner. The only question is what are you going to make now with this nifty new hack.
