How to roast sweet potatoes
Depending on how you plan to use your roasted sweet potatoes you can choose whether or not you want to peel them. For example, if you’re making a sweet potato pie, you don’t need to peel them as you can easily scoop the flesh out of the vegetable once cooked. However, if you’re planning to add the roasted veg to a salad, you may want to peel and dice.
Method:
Step 1
Prep your sweet potatoes by halving, slicing or dicing.
Step 2
Preheat your oven to 200°C. Line a baking tray with baking paper. Place your sweet potato on the tray and drizzle with oil and season with salt and pepper.
Step 3
Bake, turning occasionally, for 30 mins or until sweet potato is slightly brown on the outside and tender on the inside.

How to cook sweet potatoes in a microwave
Method:
Step 1
Prep your sweet potatoes by peeling, washing and cutting them into the size of a regular potato. To help them cook evenly, pierce them all over with a fork.
Step 2
Place the pieces on a microwave-safe plate and microwave for 10 minutes, rotating them halfway through. Depending on your microwave you may need to cook them longer.
Step 3
Bake, turning occasionally, for 30 mins or until sweet potato is slightly brown on the outside and tender on the inside.
How to cook sweet potatoes on the stove
When boiling sweet potatoes on the stove you do not need to peel them, however, keep in mind that it will take longer with the skin-on.
Method:
Step 1
Bring a large pot of salted water to the boil. Make sure there’s enough water so that the sweet potatoes are fully submerged with a little extra to spare.
Step 2
Carefully add your sweet potatoes to the boiling water.
Step 3
Reduce the heat to a medium-high. If you are boiling whole sweet potatoes it will take 30-50 minutes,
Step 4
Drain in a colander and use in your favourite sweet potato recipes.
