How can I substitute gluten-free flour in a recipe?
If you can’t find a gluten-free recipe for a dish you want to make, it is possible to swap out the flour for a gluten-free alternative.
Mandy Sacher, a cookbook author and Global Chief Nutrition Officer at MindChamps Australia, says, “I find blending multiple flours creates a fluffier texture than only one gluten-free flour substitute,” says Mandy. “My favourite combo is buckwheat flour, brown rice flour and arrowroot (all measured in equal parts).
“For a grain-free option, use almond meal and arrowroot 2:1. When using this option, the ratio of wet ingredients to dry ingredients often needs to be adjusted.”
