Makes 12 bites
• ½ cup extra virgin coconut oil, melted
• ¼ cup chia seeds
• 1 Tbsp raw cacao powder or unsweetened cocoa powder
• 1 Tbsp maple syrup
• 1 tsp vanilla extract
Step 1 Line 12 holes of a 24-hole mini muffin tin with mini paper cases.
Step 2 Combine all ingredients in a bowl and stir until cacao is completely dissolved. Spoon 1 Tbsp of the mixture into each prepared paper case, stirring mixture occasionally to prevent chia seeds from sinking to the bottom of the bowl and settling.
Step 3 Freeze for 30 minutes or until firm. Serve or store in an airtight container in the fridge or freezer for up to 1 week.
