500g chicken breast fillets
1/3 cup oyster sauce
2 Tbsp soy sauce
2 tsp crushed garlic
1 tsp grated ginger
2 tsp cornflour
1 Tbsp olive oil
1 red capsicum, sliced
2 cups broccoli florets
1 Tbsp water
2 sliced green shallots
1 cup baby spinach leaves
1/2 cup cashews
250g SunRice Steamed Rice & Chia
Step 1: Cut 500g chicken breast fillets into thin strips.
Step 2: Combine 1/3 cup oyster sauce, 2 Tbsp soy sauce, 2 tsp crushed garlic, 1 tsp grated ginger and 2 tsp cornflour in a bowl.
Step 3: Heat a frying pan over a high heat.
Step 4: Add 1 Tbsp olive oil. Cook chicken, in 2 batches, for 4 minutes until browned.
Step 5: Transfer to a bowl. To same pan, add 1 sliced red capsicum, 2 cups broccoli florets and 1 Tbsp water.
Step 6: Cook, covered, for 2 minutes.
Step 7: Add oyster sauce mixture and cooked chicken to pan with 2 sliced green shallots, 1 cup baby spinach leaves and 1/2 cup cashews.
Step 8: Stir until hot.
Step 9: Heat 250g SunRice Steamed Rice & Chia following pack instructions, then stir through stir-fry. Serve.
