Ingredients
1 cup caster sugar
125ml water
125ml thickened cream
Method

Combine sugar and water in a medium saucepan over low heat. Cook, stirring, until sugar has dissolved. Bring to the boil. Boil, without stirring, for 8 minutes or until mixture turns rich golden, brushing down pan with cold water if sugar crystals form.

Remove from heat and immediately stir in cream. Return to heat, reduce heat to low and cook, stirring, for 1 minute. Set aside for 5 minutes, transfer to a heatproof bowl and chill for 1 hour or until cooled.
