Ingredients
250g plain sweet biscuits
100g melted butter
¼ cup plain flour
2 apples, cored, thinly sliced (see tip)
1 lemon, juice
Strawberries, hulled and halved to serve
Custard
½ cup milk
½ cup cream
½ cup brown sugar
4 egg yolks
2 Tbs custard powder
1 tsp vanilla extract

Preheat oven to moderate, 180°c. Lightly grease and line a 20 x 30cm slice pan with baking paper, extending 5cm over long sides.

In a food processor, crush biscuits until fine breadcrumbs form. Transfer to a bowl. Stir in butter, flour and egg. Press evenly over base and sides of pan. Bake 15 minutes. Cool.

Custard
In a small saucepan, heat combined milk and cream to boiling point on medium. Remove from heat. In a small bowl, whisk brown sugar, yolks, custard powder and vanilla together. Gradually pour in milk mixture, whisking constantly to combine. Pour into cooled slice case.

Toss apples in lemon juice. Arrange in a single layer over filling, overlapping by two-thirds.

Bake 35-40 minutes, until filling is set. Allow to cool completely. Serve in slices with fresh strawberries.
Cook's tip
Use a mandolin or V slicer to shave apple into thin, 1mm-thick discs.
