Coconut and lime cake
Step 1 In Step 2, add 2 tsp coconut essence, the finely grated zest of 1 lime, ½ cup desiccated coconut and 2 Tbsp milk to butter mixture.
Step 2 Instead of making Glacé Butter Icing, put 2 cups icing sugar and 2 Tbsp boiling water in a large bowl and stir to combine. Spread over top of cake, allowing icing to fall down the side.
Step 3 Decorate cake with toasted shredded coconut and shredded lime zest, and serve.
Orange and poppyseed cake
Step 1 In Step 2, add 1 Tbsp poppy seeds, the finely grated zest of 1 orange and ¼ cup fresh orange juice to butter mixture.
Step 2 In Step 6, add 2 tsp orange juice and a pinch of finely grated orange zest instead of essence and water to Glacé Butter Icing. Decorate the top with orange slices and serve.
Step 1 In Step 4, divide batter into 3 equal portions and put in 3 separate bowls. Combine 2 Tbsp milk with 1 Tbsp cocoa powder in a small jug and stir into 1 portion. Add 2 tsp strawberry essence to another portion and tint with a few drops of pink food colouring. Leave 1 portion plain.
Step 2 Put large spoonfuls of batter into prepared tin, alternating colours.
Step 3 Run a butter knife through batter a few times, starting from the base and working your way to the top, to create a swirled, marbled effect.
Step 4 Instead of Glacé Butter Icing, make a half-quantity of Chocolate Buttercream Icing and spread over top and side of cake. Sprinkle a band of hundreds and thousands around rim of cake and serve.
