2 cups Christmas cake, diced
½ cup vanilla custard
½ cup fresh berries (such as raspberries)
½ cup meringue, coarsely crushed
4 scoops vanilla ice-cream
¼ cup chocolate fudge sauce
¼ cup chocolate-coated honeycomb
Pomegranate arils, to serve
Divide cake between 4 stemless wine glasses, pour over brandy and custard.
Layer berries and meringue over cake, and top with ice-cream. Drizzle with chocolate sauce, and crumble over honeycomb pieces. Garnish with arils and serve immediately.
