Ingredients
¼ cup extra virgin olive oil
400g button mushrooms, thinly sliced
2 cloves garlic, minced
½ bunch thyme leaves
1 tsp caraway seeds
500g sirloin steak, cut into strips
¼ cup brandy
2 tsp hot paprika
¼ cup water
200g sour cream
Sea salt flakes and freshly ground black pepper, to season
Herbed rice, to serve
Branston pickle, to serve
Method

Heat 1/2 oil in a large frying pan over high heat. Add mushroom and fry for 5 minutes or until browned. Add garlic, thyme and caraway, then transfer mixture to a bowl.

Add remaining oil to pan. Add beef strips and cook until well browned. Stir in brandy, paprika, water and mushroom mixture. Remove from heat. Stir in sour cream and season with salt and pepper. Serve with herbed rice and pickle.
