Ingredients
• 1 brown onion, finely sliced
• 1 tsp sea-salt flakes
• 400g premium beef mince
• 1 clove garlic, minced
• 2 Tbsp tomato paste
• 1 Tbsp Worcestershire sauce
• 2 tsp mixed dried herbs
• Extra sea-salt flakes and freshly ground black pepper, to season
• 2 Tbsp vegetable oil
• 8 small soft white buns, halved
• 8 slices gouda cheese
• 1⁄4 cup tomato relish
• 1⁄4 cup sliced gherkins
Method

Sprinkle onion with salt and put in a colander to drain for 5 minutes.

Put beef, garlic, tomato paste, Worcestershire and herbs in a large bowl. Season, then mix well with hands until soft and sticky. Form into 8 patties.

Heat oil in a large frying pan over a medium heat. Add onion and cook for 3 minutes or until lightly coloured. Form onion into 8 mounds, then put 1 patty on top of each. Cook for 2 minutes or until beef begins to firm up. Put 1 base of bun half on top of each patty. Cook for a further 5 minutes or until patties are firm.

Remove buns, then top each patty with a slice of cheese. Cook until just melted. Top base bun halves with patties, relish and gherkin, finishing with bun tops. Serve.
