Ingredients
• 1 cup milk
• 75g unsalted butter
• 1½ cups plain flour
• 1⁄4 caster sugar
• 3 eggs
• 2 ripe bananas, mashed
• Vegetable oil, for frying
• Cinnamon sugar, to serve
• Lime wedges, to serve
• Fresh berries, to serve
• Double cream, to serve
Method

Put milk and butter in a saucepan over a medium heat and cook until boiling. Add flour and sugar. Cook, stirring, until mixture comes away from sides of pan.

Transfer mixture to the bowl of an electric mixer and beat on medium, using paddle attachment, for 2 minutes or until steam subsides. Add eggs, 1 at a time, beating constantly until smooth. Fold in banana.

Spoon batter into a piping bag fitted with a large star-shaped nozzle. Heat vegetable oil in a large deep frying pan over a high heat until temperature reaches 180°C on a cook’s thermometer. Pipe 15cm lengths of batter into oil and cook for 2 minutes or until golden and crisp. Drain on paper towel, then dust with cinnamon sugar. Serve with lime wedges, berries and double cream.
