Apple and raisin crumble

Ingredients

• 5 Granny Smith apples, peeled, sliced

• 1 cup raisins

• 1/2 cup apple juice

• 3/4 cup brown sugar

• 1 cup plain flour

• 1/2 cup caster sugar

• 1/2 cup rolled oats

• 75g unsalted butter, softened

• Vanilla ice-cream, to serve

Method

  1. Preheat oven to 180°C. Put apple, raisins, juice and brown sugar in a medium saucepan and cook over a medium heat for 15 minutes or until apple is soft. Transfer to six 3/4 cup capacity ramekins or a 1.5L-capacity baking dish.

  2. Put flour, caster sugar and oats in a large bowl and stir well. Add butter and rub lightly until coarse crumbs form, then scatter over apple mixture. Bake for 25 minutes in ramekins or 35-40 minutes in dish or until golden and crisp. Top with ice-cream and serve.
