Dietitian and SunRice health and wellness ambassador Lyndi Cohen has developed different foods you can pair with rice to make a nutritious meal in minutes, keeping time, cost and cooking to a minimum.
1. Midweek stir-fry
Rice + chicken mince + stir-fry vegetable mix + stir-fry sauce + cashew nuts
“The trick to midweek meals is using products that make cooking quick and easy. Using chicken mince in a stir-fry is another affordable option. I also find that mince holds onto the flavour better than stir-fry strips and also tastes better after being reheated.”
2. Healthy fried rice
Rice + egg + Frozen peas, corn, carrot mix + fish sauce + lime juice
“Fried rice can be made seriously healthy and quickly when you use brown rice and add in vegetables like frozen peas, corn and carrot mix. Throw in a free-range egg for a healthy source of protein and finish with flavour boosters for a really affordable meal the whole family will enjoy.”
3. Mexican rice tacos
Rice + refried beans + tortillas + tomato salsa + guacamole
